From the page: A ripe banana is in a hurry — and full of gifts

Idea 2

Banana candy rolls

Easy 40 min

This treat has roots in rural Brazilian tradition, where ripe bananas became stovetop preserves in copper pots to last the whole month. The magic is the fruit's pectin: over low heat and with patience, it naturally thickens the mixture until it pulls away from the pot — no artificial anything needed.

What you need

  • 6 ripe bananas, chopped
  • 1/2 cup of sugar
  • Juice of half a lemon (keeps it from darkening and brightens the flavor)
  • Ground cinnamon to taste
  • Sanding sugar or shredded coconut for rolling
  • A heavy-bottomed pot and a wooden spoon

How to make it

  1. 1

Combine the bananas, sugar, and lemon over low heat, stirring constantly — the lemon keeps the color light and the low heat keeps the sugar from burning underneath.

  2. 2

Stir for about 20 to 30 minutes until the mixture pulls away from the bottom of the pot; that's the pectin kicking in, when it has thickened enough to shape.

  3. 3

Turn off the heat, stir in the cinnamon, and let it cool completely — while warm, it sticks to your hands and won't hold its shape.

  4. 4

Grease your hands with a little oil, take small portions, and roll them into little candies or balls.

  5. 5

Roll each piece in sanding sugar or shredded coconut to finish and keep them from sticking together.

Finishing touches

Store in a sealed container in the fridge for up to a week — if the batch is big, they make a lovely homemade gift wrapped in wax paper.
