From the page: Leftover rice still has a lot to give

Idea 1

Fried rice from leftovers

Easy 15 min

the Brazilian take on "fried rice", which was born in Asia precisely as a leftover recipe — cold, loose grains fry better than fresh ones because the starch has already set and they don't turn mushy. It's proof that some of the world's best recipes were born in the next-day pot.

What you need

  • Day-old cooked rice
  • Egg (optional)
  • Onion, garlic, leftover vegetables, meat or sausage
  • Oil, salt, green herbs

How to make it

  1. 1

Heat a skillet or pot well with a drizzle of oil — the rice needs to meet high heat to toast, not cook all over again.

  2. 2

Sauté onion and garlic until golden; if you have leftover chopped vegetables or meat, add them now.

  3. 3

Add the rice and stir occasionally, letting it touch the hot bottom to create those little toasted bits.

  4. 4

Make a space in the center, crack in an egg, stir just the egg until it sets, then mix it into the rice.

  5. 5

Finish with salt and green herbs off the heat.

Finishing touches

serve with a fried egg on top or cover with cheese and broil it. It's also great rolled up inside an omelet.
